The coppa is a part of the loin, part parsley of fat, boned, salted, then peppered, dressed with a natural gut, and to finish smoke over a wood fire.
The coppa is then put in the kiln and refined for several months. The surface flora is essential to the aromatic rise of the coppa.
The sliced coppa is marbled with fat and a very dark lean which makes it melting and tastier.
